Rhubarb meringue compote

The rhubarb season is nicely starting in the garden; I was able to pick the first stems … Not enough to make jam, but enough to prepare the Midi dessert. So I decided to make a compote with the long green stems veined with rhubarb red. The meringue dome will bring a sweet touch that will reduce the acidity of the beautiful plant.
