Viennese is a crust that is sometimes added to fish preparations to make them crispy; the taste of Comté goes very well with that of yellow wine from Relay and sol. This dish is delicious, accompanied by asparagus, green or white mushrooms, and morels. Still, it can also be prepared in winter with salsify, Brussels sprouts, and black or white truffles. Yellow wine is a typical Jura product that makes excellent sauces for white fish or poultry. Its nutty taste is perfect with morels and cream sauces.
